An apricot kernel is a single seed found inside the stone of an apricot. Apricot kernels are similar in appearance to a small almond. Billed as a new superfood, apricot kernels have cancer-fighting and detox-enhancing properties.

What is bitter apricot Kernels?

Raw bitter apricot seeds contain a natural toxin called cyanogenic glycoside which is commonly present in the seeds of fruits. When the consumer chews the fresh seeds or stone of a fruit, the cyanogenic glycoside in it can be transformed into hydrogen cyanide, which is poisonous to the consumer.
If you do decide to eat them, you should not eat more than 0.37g per adult per day, which is the equivalent of 1-2 small kernels. Eating more than this amount could cause an acute health risk. Children should not eat apricot kernels.

How Can we use it?

You can safely eat apricot seeds raw. In fact, the Egyptian culture has a traditional snack called dokka, made from crushed apricot seeds mixed with coriander and salt. To eat apricot seeds fresh, slice open an apricot and take out the pit. Once the pit has been taken out, use a nutcracker to crack the pit open.
